How to air fry yucca. Don t overcrowd the fryer as you want the fries to have room to cook evenly. Then soak them in cold water for about 15 minutes. Allow the fries to air dry then add them to a cast iron pan with 2 tablespoons of oil. You may find that you need to make the fries in two batches. Air fry at 365 o f for approximately 15 minutes or until the edges are golden brown tossing in between cooking.
Use a mandolin to cut thin evenly sized tapioca slices. Drain and dry thoroughly. Cut the yuca into french fry sized sticks discarding the fibrous core. Preheat the air fryer if necessary and fry the yuca for no more than 15 minutes on 380. Next drain the yuca batons from the water bowl and boil for 5 minutes.
Slice the yuca into your desired fry shape. Cook at 380 degrees for 12 15 minutes flipping yuca fries half way through. Drain and allow to steam for several minutes until cool enough to handle. Set the dried yuca aside and allow to cool. Fry the yuca fries for 2 3 minutes on each side until golden brown.
Boil in water with salt until the yuca can be pierced with a fork. Place yuca in mixing bowl and coat with oil and salt. If you prefer thicker fries cut the yuca into wider wedges. Fry the yuca in batches until golden brown and crispy about 5 minutes per batch. Heat oil in deep fryer to 375 degrees f 190 degrees c.
Drain well remove the hard fibrous stems in the center of the cooked pieces. Mix oil and seasoning in a bowl. If you prefer larger fries cut the yuca longer and thinner. Place the cooked yuca in a bowl and toss olive oil salt and pepper to taste. Transfer the yuca into a dry bowl add oil salt and pepper and the remaining seasonings.
